So since starting to watch my carbs I have learned a few things and I am also learning more along with way. Finding a vegan low carb main dish may be easy, but trying to come up with a side may be a challenge! Luckily we have the internet. lol. I found that cauliflower rice is a low carb version of regular rice! Just process your cauliflower in a food processor until it has the consistency of rice or quinoa… throw in a pan with hot olive oil and cook a few minutes.. then add some garlic, fresh basil and lemon juice… voila!!
